The Mexican-style eatery is owned by Brasher native Bob Pike.
Pike said he dabbled in some catering while being a caseworker for the county for the last decade, but is now making the switch to the food industry.
That move seems to be paying off so far.
“We ran out of food,” Pike said about his first two days open.
Burrito Bob’s sells burritos, of course, along with quesadillas, soft shell tacos, and burrito bowls for main dishes. Meat options are beef, chicken and pork. Veggie options are also on the menu.
Sides include chips with choices of guacamole, queso, pico de Gallo, and corn salsa.
Soda and sweets such as cheesecake, chocolate cake and chocolate chip cookies round out the menu.
“It’s an excellent location … lots of foot traffic,” Pike said.
He plans to have seating for about 20 people inside, and outdoor tables and chairs when weather allows.
